I craved something local and comforting on a recent evening in Bacolod City. Accompanied by my good friends Engiemar Tupas and Lei Lani Dusaban, we visited Sharyn’s Cansi House, which is renowned for its authentic cansi. This traditional dish, known for its rich flavors and the distinctive sourness of the local fruit batwan, has become a staple for anyone wanting to experience the culinary heart of Bacolod.
When we arrived, it was past the usual dinner hours, and to our surprise, we were the only diners in the restaurant. The quiet atmosphere allowed us to immerse ourselves in the experience fully. Sharyn’s Cansi House is located in the Capitol Shopping Center on Narra Avenue, and it has a nostalgic charm that reflects its long-standing history in the community.
As we settled into our seats, I couldn’t help but notice the simplicity of the decor. The wooden tables and chairs have likely seen countless meals over the years. While this adds to its character, I felt a few updates could enhance the dining experience. During previous visits at lunchtime, I felt warm inside despite the scattered electric fans. This evening was comfortable enough, but adding air conditioning would make a difference, especially during the hotter months.
The staff at Sharyn’s were incredibly friendly and attentive. They greeted us with warm smiles and quickly assisted us with our orders. It’s always lovely when restaurant staff go out of their way to make your experience memorable.
One unique aspect of dining at Sharyn’s is that they don’t have a printed menu. Instead, they focus on their signature dish—cansi. This straightforward approach makes it easy for diners; you know exactly what you’re there for.
Now let’s get to the highlight of our evening—the cansi. Our bowl arrived at the table, steaming hot and filled with aromatic goodness. The rich broth was a beautiful blend of savory and sour notes that immediately made my mouth water. The beef shank was incredibly tender, practically falling off the bone with a gentle nudge from my spoon.
What truly sets Sharyn’s cansi apart is their use of batwan, giving it that signature tangy flavor you won’t find anywhere else. As I took my first sip of the broth, I felt a wave of comfort wash over me—something about this dish felt like home.
We paired our cansi with steaming white rice (a must-have!), which soaked up all that delicious broth. Engiemar and Lei Lani were equally impressed; we spent much of our meal sharing bites and raving about how satisfying it was.
One great thing about dining here is that you can always ask for extra soup if you want more! It’s those little touches that make a meal even better.
