Quan Delicacies’ Puto and Dinuguan

Frequently considered an unusual   dish to foreigners, but for us Filipinos “Dinuguan” is delicious and will always be part of a favorite Pinoy Cuisine.

Dinuguan   is a Filipino savory stew of meat and/or offal (typically lungs, kidneys, intestines, ears, heart and snout) simmered in a rich, spicy dark gravy of pig blood, garlic, chili (most often siling mahaba), and vinegar. The term dinuguan comes from the Filipino word dugo meaning “blood”. Possible English translations include pork blood stew or blood pudding stew. It is also sometimes jokingly called “chocolate meat”.

Dinuguan can also be served without using any offal, using only choice cuts of pork.   It can also be made from beef and chicken meat, the latter being known as dinuguang manok (‘chicken dinuguan’). Dinuguan is usually served with white rice or a Philippine rice cake called puto.

Puto is usually served as a  side dish for Pig’s Blood Stew (“Dinuguan”) or  eaten for breakfast dipped into or paired with a cup of hot coffee or hot chocolate.

Quan Delicacies is famous for its “Dinuguan and Puto”. Quan’s Dinuguan is made of pork  and chicken meat carefully prepared to suit the picky taste of every Negrense. “Puto” on the other hand,  is one of the first products which Quan had perfected. In fact, for those who are familiar with Quan’s Puto, this native delicacy is even being brought to the US by its avid patron. They would simply freeze the puto and pack in styro and simply put the puto in a steamer before serving.
